Each deck is equipped with a digital, electronic independent controller, which includes front temperature loss compensation, an economy mode, a steam box on/off switch, and a 99-hour delay start-up timer. The sturdy 1″ (25 mm) thick refractory stone deck can hold one 18″ x 26″ sheet pan per deck and accommodate up to four stacked decks.
